Rum Cake
Ingredients:
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup milk
- 3 large eggs
- 1/4 cup rum
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1/4 cup sliced almonds
Instructions:
- In a large mixing bowl, cream together butter and sugar until light and fluffy.
- Add in eggs, one at a time, mixing well after each addition.
- In a separate bowl, sift together flour, baking powder, and salt.
- Add half of the flour mixture to the butter mixture, mixing until just combined.
- Mix in milk, vanilla extract, and almond extract.
- Add in remaining flour mixture and mix until well combined.
- Grease a 9-inch round cake pan and sprinkle sliced almonds on the bottom.
- Pour batter into the prepared pan and smooth out the top.
- Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is still hot, use a skewer to poke holes all over the top of the cake.
- Drizzle rum over the top of the cake, allowing it to seep into the holes.
- Cool the cake in the pan for 10 minutes before removing and allowing it to cool completely on a wire rack.
- Serve and enjoy your delicious homemade rum cake
