Rum Cake

  1. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  2. Add in eggs, one at a time, mixing well after each addition.
  3. In a separate bowl, sift together flour, baking powder, and salt.
  4. Add half of the flour mixture to the butter mixture, mixing until just combined.
  5. Mix in milk, vanilla extract, and almond extract.
  6. Add in remaining flour mixture and mix until well combined.
  7. Grease a 9-inch round cake pan and sprinkle sliced almonds on the bottom.
  8. Pour batter into the prepared pan and smooth out the top.
  9. Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  10. While the cake is still hot, use a skewer to poke holes all over the top of the cake.
  11. Drizzle rum over the top of the cake, allowing it to seep into the holes.
  12. Cool the cake in the pan for 10 minutes before removing and allowing it to cool completely on a wire rack.
