Roulade
Ingredients:
- 4 large eggs
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 cup jam or jelly of your choice
- Powdered sugar, for dusting
Instructions:
- Preheat your oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
- In a large mixing bowl, beat the eggs, sugar, and salt until light and fluffy.
- In a separate small bowl, sift the flour and baking powder together.
- Gradually add the flour mixture to the egg mixture and mix until well combined.
- Add in the vanilla extract and mix until fully incorporated.
- Spread the batter evenly onto the prepared pan.
- Bake for 8-10 minutes or until the edges are lightly golden and the center is set.
- Remove the cake from the oven and flip it onto a clean kitchen towel sprinkled with powdered sugar. Carefully peel off the parchment paper.
- Starting at the shorter end, roll the cake and towel together tightly. Let it cool completely.
- Unroll the cake and spread jam or jelly evenly over the surface.
- Re-roll the cake tightly, without the towel this time. Wrap it in plastic wrap and refrigerate for at least 1 hour.
- When ready to serve, slice the roulade into rounds and dust with powdered sugar. Enjoy!
