Roulade

  1. Preheat your oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs, sugar, and salt until light and fluffy.
  3. In a separate small bowl, sift the flour and baking powder together.
  4. Gradually add the flour mixture to the egg mixture and mix until well combined.
  5. Add in the vanilla extract and mix until fully incorporated.
  6. Spread the batter evenly onto the prepared pan.
  7. Bake for 8-10 minutes or until the edges are lightly golden and the center is set.
  8. Remove the cake from the oven and flip it onto a clean kitchen towel sprinkled with powdered sugar. Carefully peel off the parchment paper.
  9. Starting at the shorter end, roll the cake and towel together tightly. Let it cool completely.
  10. Unroll the cake and spread jam or jelly evenly over the surface.
  11. Re-roll the cake tightly, without the towel this time. Wrap it in plastic wrap and refrigerate for at least 1 hour.
  12. When ready to serve, slice the roulade into rounds and dust with powdered sugar. Enjoy!
