Roast Pork

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the salt, black pepper, garlic powder, thyme, and rosemary.
  3. Season the pork loin with the spice mixture, making sure to rub it in evenly on all sides.
  4. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork loin and sear for about 3-4 minutes on each side until a golden crust forms.
  5. In a separate bowl, mix the balsamic vinegar and soy sauce together.
  6. Place the seared pork loin in a roasting pan and pour the balsamic-soy mixture over it.
  7. Cover the pan with aluminum foil and place it in the preheated oven.
  8. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 145°F (63°C).
  9. Once done, remove the pork loin from the oven and let it rest for 10 minutes before slicing and serving.
