Roast Chicken
Ingredients:
- 1 whole chicken
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- 1 lemon, sliced
- 1 onion, sliced
- 1 cup chicken broth
Instructions:
- Preheat your oven to 375°F (190°C).
- Remove the giblets from the chicken and pat the chicken dry with paper towels.
- In a small bowl, mix together olive oil, salt, black pepper, garlic powder, dried rosemary, and paprika.
- Rub the spice mixture all over the chicken, making sure to coat evenly and inside the cavity.
- Place the sliced lemon and onion inside the cavity of the chicken.
- Place the chicken in a roasting pan and pour chicken broth into the pan.
- Cover the pan with foil and place it in the preheated oven.
- Roast for 1 hour and 30 minutes, basting the chicken with the pan juices every 30 minutes.
- Remove the foil cover and roast for an additional 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.
- Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
