Roast Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Remove the giblets from the chicken and pat the chicken dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, dried rosemary, and paprika.
  4. Rub the spice mixture all over the chicken, making sure to coat evenly and inside the cavity.
  5. Place the sliced lemon and onion inside the cavity of the chicken.
  6. Place the chicken in a roasting pan and pour chicken broth into the pan.
  7. Cover the pan with foil and place it in the preheated oven.
  8. Roast for 1 hour and 30 minutes, basting the chicken with the pan juices every 30 minutes.
  9. Remove the foil cover and roast for an additional 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.
  10. Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
