Roast Beef
Ingredients:
- 4 pounds beef roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup beef broth
Instructions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary.
- Rub the beef roast with olive oil and then rub the spice mixture all over the roast.
- Place the roast in a roasting pan and pour the beef broth into the pan.
- Cover the pan with aluminum foil and roast for 1 hour.
- After 1 hour, remove the foil and continue to roast for an additional 30 minutes to 1 hour, depending on desired doneness.
- Check the internal temperature of the roast with a meat thermometer – it should read 135-140°F (60-63°C) for medium rare or 145-150°F (63-65°C) for medium.
- Remove the roast from the oven and let it rest for 10-15 minutes before carving.
