Risotto
Ingredients:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 1/2 cups arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup white wine
- 1 cup finely grated parmesan cheese
- Salt and pepper to taste
- Fresh chopped herbs (optional)
Instructions:
- In a large saucepan, heat olive oil over medium heat.
- Add onion and garlic and cook until softened, about 3 minutes.
- Add arborio rice and stir to coat with oil.
- Slowly pour in 1 cup of chicken or vegetable broth, stirring constantly until most of the liquid is absorbed.
- Add another cup of broth and continue stirring until absorbed.
- Repeat until all 4 cups of broth have been absorbed and the rice is creamy and tender.
- Stir in white wine and cook for an additional 2-3 minutes.
- Remove from heat and stir in parmesan cheese until melted and well combined.
- Season with salt and pepper to taste and top with fresh herbs, if desired.
- Serve hot and enjoy your delicious risotto!
