Risotto

Ingredients:

Instructions:

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add onion and garlic and cook until softened, about 3 minutes.
  3. Add arborio rice and stir to coat with oil.
  4. Slowly pour in 1 cup of chicken or vegetable broth, stirring constantly until most of the liquid is absorbed.
  5. Add another cup of broth and continue stirring until absorbed.
  6. Repeat until all 4 cups of broth have been absorbed and the rice is creamy and tender.
  7. Stir in white wine and cook for an additional 2-3 minutes.
  8. Remove from heat and stir in parmesan cheese until melted and well combined.
  9. Season with salt and pepper to taste and top with fresh herbs, if desired.
  10. Serve hot and enjoy your delicious risotto!
