Rice Pudding

Instructions:

  1. In a medium pot, bring 2 cups of water to a boil.
  2. Add 1 cup of white rice and 1/2 teaspoon of salt to the boiling water.
  3. Reduce heat and let the rice simmer for 18-20 minutes, until all the water is absorbed.
  4. In a separate pot, combine 2 cups of whole milk, 1/2 cup of heavy cream, and 1/2 cup of sugar. Heat the mixture on medium heat, stirring occasionally.
  5. Once the sugar has dissolved, add the cooked rice to the pot of milk and stir to combine.
  6. Let the rice pudding simmer for 15-20 minutes, until the mixture thickens and the rice is fully cooked.
  7. Remove the pot from heat and stir in 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg.
  8. If desired, add 1/4 cup of raisins to the rice pudding and stir to combine.
  9. Let the pudding cool for a few minutes before serving. You can serve it warm, cold, or at room temperature.
