Rice Pudding
Ingredients:
- 1 cup white rice
- 2 cups water
- 1/2 teaspoon salt
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup raisins (optional)
Instructions:
- In a medium pot, bring 2 cups of water to a boil.
- Add 1 cup of white rice and 1/2 teaspoon of salt to the boiling water.
- Reduce heat and let the rice simmer for 18-20 minutes, until all the water is absorbed.
- In a separate pot, combine 2 cups of whole milk, 1/2 cup of heavy cream, and 1/2 cup of sugar. Heat the mixture on medium heat, stirring occasionally.
- Once the sugar has dissolved, add the cooked rice to the pot of milk and stir to combine.
- Let the rice pudding simmer for 15-20 minutes, until the mixture thickens and the rice is fully cooked.
- Remove the pot from heat and stir in 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg.
- If desired, add 1/4 cup of raisins to the rice pudding and stir to combine.
- Let the pudding cool for a few minutes before serving. You can serve it warm, cold, or at room temperature.
