Rice Pilaf

Instructions:

  1. In a medium saucepan, melt butter over medium heat.
  2. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add rice and stir to coat with butter.
  4. Add chicken broth, salt, and pepper and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18 minutes.
  6. Remove from heat and let sit for 5 minutes.
  7. Fluff with a fork and stir in parsley.
