Rhubarb Pie

  1. In a large mixing bowl, combine 2 1/2 cups of flour and 1 teaspoon of salt.
  2. Add 1 cup of chilled and diced butter to the flour mixture.
  3. Using a pastry cutter or your hands, mix the butter into the flour until the mixture resembles coarse crumbs.
  4. Sprinkle 1/4 cup of ice water over the mixture and gently mix until the dough comes together.
  5. Divide the dough in half and shape into two discs. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 375°F (190°C).
  7. In a separate bowl, mix together 1 cup of granulated sugar, 1/3 cup of flour, and 1/2 teaspoon of ground cinnamon.
  8. Gently stir in 4 cups of diced rhubarb until well coated.
  9. Roll out one of the dough discs on a floured surface and transfer to a 9-inch pie dish. Trim the edges as needed.
  10. Pour the rhubarb filling into the pie crust and dot with 1 tablespoon of diced butter.
