Rhubarb Pie
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup butter, chilled and diced
- 1/4 cup ice water
- 1 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 4 cups diced rhubarb
- 1 tablespoon butter, diced
- 1 egg yolk
- 1 tablespoon milk
Instructions:
- In a large mixing bowl, combine 2 1/2 cups of flour and 1 teaspoon of salt.
- Add 1 cup of chilled and diced butter to the flour mixture.
- Using a pastry cutter or your hands, mix the butter into the flour until the mixture resembles coarse crumbs.
- Sprinkle 1/4 cup of ice water over the mixture and gently mix until the dough comes together.
- Divide the dough in half and shape into two discs. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- In a separate bowl, mix together 1 cup of granulated sugar, 1/3 cup of flour, and 1/2 teaspoon of ground cinnamon.
- Gently stir in 4 cups of diced rhubarb until well coated.
- Roll out one of the dough discs on a floured surface and transfer to a 9-inch pie dish. Trim the edges as needed.
- Pour the rhubarb filling into the pie crust and dot with 1 tablespoon of diced butter.
