Reuben Sandwich

Instructions:

  1. Preheat your griddle or large skillet over medium heat.
  2. Spread Thousand Island dressing on one side of each slice of bread.
  3. Place a slice of Swiss cheese on the dressing side of each slice of bread.
  4. On four of the slices of bread, layer the corned beef and sauerkraut on top of the Swiss cheese.
  5. Top with the remaining four slices of bread, cheese side down.
  6. In a small skillet, melt the butter over medium heat.
  7. Carefully transfer the assembled sandwiches to the skillet.
  8. Cook for 2-3 minutes on each side until bread is golden brown and cheese is melted.
  9. Slice in half and serve while still hot.
