Refried Beans
Ingredients:
- 2 cups dried pinto beans
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 jalapeno, seeded and minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
- 1/4 cup vegetable oil
Instructions:
- In a large pot, cover pinto beans with water and soak overnight.
- Drain and rinse beans. In the same pot, add beans along with onion, garlic, jalapeno, cumin, chili powder, and broth. Bring to a boil, then reduce heat and let simmer for 1 1/2 to 2 hours, or until beans are tender.
- Using an immersion blender or potato masher, mash the beans to desired consistency. Season with salt and pepper to taste.
- In a separate pan, heat vegetable oil over medium heat. Add mashed beans and fry, stirring occasionally, for about 10 minutes or until beans are heated through and slightly crispy on the edges.
- Serve hot as a side dish, or use for filling in burritos, tacos, or tostadas.
