Ratatouille

  1. In a large skillet or pot, heat olive oil over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add eggplant, zucchini, red bell pepper, and garlic. Cook for about 10 minutes, stirring occasionally.
  4. Stir in diced tomatoes, thyme, oregano, salt, and pepper. Bring to a simmer.
  5. Reduce heat to low and let cook for 20-25 minutes, until vegetables are softened.
  6. Serve hot as a side dish or over rice or quinoa as a main dish.
