Ratatouille
Ingredients:
- 1 onion, chopped
- 1 eggplant, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1/4 cup olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- In a large skillet or pot, heat olive oil over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add eggplant, zucchini, red bell pepper, and garlic. Cook for about 10 minutes, stirring occasionally.
- Stir in diced tomatoes, thyme, oregano, salt, and pepper. Bring to a simmer.
- Reduce heat to low and let cook for 20-25 minutes, until vegetables are softened.
- Serve hot as a side dish or over rice or quinoa as a main dish.
