Raspberry Pie

  1. In a large bowl, mix together flour and butter until crumbly. Gradually add cold water and mix until a dough forms.
  2. Roll out dough on a lightly floured surface into a 9-inch circle. Place in a 9-inch pie dish, trimming and crimping the edges as desired.
  3. In a separate bowl, mix together raspberries, 1/4 cup sugar, cornstarch, and lemon juice. Pour mixture into prepared pie crust.
  4. Roll out remaining dough and cut into strips. Arrange strips in a lattice pattern over the top of the pie filling.
  5. In a small bowl, beat together egg and milk. Brush over lattice crust. Sprinkle with 1 tablespoon of sugar.
  6. Bake pie at 375 degrees F for 45-50 minutes, or until crust is golden brown and the filling is bubbly.
  7. Let cool before serving. Enjoy your delicious Raspberry Pie!
