Raspberry Pie
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup cold water
- 2 cups fresh or frozen raspberries
- 1/4 cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 egg, beaten
- 1 tablespoon milk
- 1 tablespoon sugar
Instructions:
- In a large bowl, mix together flour and butter until crumbly. Gradually add cold water and mix until a dough forms.
- Roll out dough on a lightly floured surface into a 9-inch circle. Place in a 9-inch pie dish, trimming and crimping the edges as desired.
- In a separate bowl, mix together raspberries, 1/4 cup sugar, cornstarch, and lemon juice. Pour mixture into prepared pie crust.
- Roll out remaining dough and cut into strips. Arrange strips in a lattice pattern over the top of the pie filling.
- In a small bowl, beat together egg and milk. Brush over lattice crust. Sprinkle with 1 tablespoon of sugar.
- Bake pie at 375 degrees F for 45-50 minutes, or until crust is golden brown and the filling is bubbly.
