Quinoa Tabbouleh

  1. Rinse the quinoa in a fine-mesh sieve under cold water.
  2. In a medium saucepan, bring the water and quinoa to a boil. Reduce heat to low and simmer for 15 minutes or until all water is absorbed.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, combine the cooked quinoa, tomatoes, cucumber, red onion, parsley, and mint.
  5. Pour the dressing over the quinoa and veggies and stir well to combine.
  6. Refrigerate for at least an hour to allow flavors to combine.
  7. Serve chilled and enjoy your delicious quinoa tabbouleh!
