Quinoa Tabbouleh
Ingredients:
- 1 cup quinoa
- 1 1/2 cups water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
Instructions:
- Rinse the quinoa in a fine-mesh sieve under cold water.
- In a medium saucepan, bring the water and quinoa to a boil. Reduce heat to low and simmer for 15 minutes or until all water is absorbed.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- In a large bowl, combine the cooked quinoa, tomatoes, cucumber, red onion, parsley, and mint.
- Pour the dressing over the quinoa and veggies and stir well to combine.
- Refrigerate for at least an hour to allow flavors to combine.
- Serve chilled and enjoy your delicious quinoa tabbouleh!
