Quinoa Stuffed Peppers
Ingredients:
- 4 bell peppers
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- ½ cup salsa
Instructions:
- Preheat the oven to 375 degrees F (190 degrees C).
- Cut the tops off the bell peppers and remove the seeds and membrane. Rinse and pat dry.
- Cook quinoa according to package instructions.
- In a pan, heat olive oil over medium heat. Add onion and garlic and sauté for 2-3 minutes, until softened.
- Add black beans, corn, cumin, chili powder, and salt and pepper to the pan with onions and garlic. Cook for an additional 2-3 minutes.
- In a mixing bowl, combine the cooked quinoa and the bean mixture.
- Place the bell peppers in a baking dish. Fill each pepper with the quinoa and bean mixture.
- Top each pepper with shredded cheddar cheese.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve hot, topped with salsa. Enjoy your delicious quinoa stuffed peppers!
