Quinoa Stuffed Peppers

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Cut the tops off the bell peppers and remove the seeds and membrane. Rinse and pat dry.
  3. Cook quinoa according to package instructions.
  4. In a pan, heat olive oil over medium heat. Add onion and garlic and sauté for 2-3 minutes, until softened.
  5. Add black beans, corn, cumin, chili powder, and salt and pepper to the pan with onions and garlic. Cook for an additional 2-3 minutes.
  6. In a mixing bowl, combine the cooked quinoa and the bean mixture.
  7. Place the bell peppers in a baking dish. Fill each pepper with the quinoa and bean mixture.
  8. Top each pepper with shredded cheddar cheese.
  9. Cover the dish with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
