Quinoa Salad
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and let simmer for 15-20 minutes or until all water is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine the cooled quinoa, diced cucumber, red bell pepper, red onion, cherry tomatoes, Kalamata olives, feta cheese, and parsley.
- In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and pepper. Pour over the quinoa salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld. Serve and enjoy!
