Quinoa Salad

Instructions:

  1. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and let simmer for 15-20 minutes or until all water is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine the cooled quinoa, diced cucumber, red bell pepper, red onion, cherry tomatoes, Kalamata olives, feta cheese, and parsley.
  3. In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and pepper. Pour over the quinoa salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes to allow flavors to meld. Serve and enjoy!
