Quinoa Pilaf
Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup dried cranberries
- 1/4 cup almonds, sliced
- 2 tablespoons fresh parsley, chopped
Instructions:
- In a large pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until liquid is absorbed and quinoa is cooked.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 2-3 minutes, until softened.
- Add minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for an additional 1-2 minutes.
- Once quinoa is cooked, add it to the skillet with the onion and garlic mixture. Stir to combine.
- Add dried cranberries, sliced almonds, and parsley to the skillet. Stir again to evenly distribute ingredients.
- Cover skillet and let cook for an additional 2-3 minutes, until cranberries and almonds are heated through.
- Serve hot and enjoy your delicious quinoa pilaf!
