Quinoa Pilaf

  1. In a large pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until liquid is absorbed and quinoa is cooked.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 2-3 minutes, until softened.
  3. Add minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for an additional 1-2 minutes.
  4. Once quinoa is cooked, add it to the skillet with the onion and garlic mixture. Stir to combine.
  5. Add dried cranberries, sliced almonds, and parsley to the skillet. Stir again to evenly distribute ingredients.
  6. Cover skillet and let cook for an additional 2-3 minutes, until cranberries and almonds are heated through.
  7. Serve hot and enjoy your delicious quinoa pilaf!
