Quinoa Pancakes
Ingredients:
- 1 cup quinoa
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Optional toppings: fruit, syrup, nuts, etc.
Instructions:
- In a large mixing bowl, combine the quinoa, flour, sugar, baking powder, baking soda, and salt. Mix well.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or butter.
- Pour 1/4 cup of batter onto the skillet or griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancake and cook for an additional 2-3 minutes.
- Repeat with the remaining batter.
- Serve pancakes warm and top with desired toppings.
