Quinoa Pancakes

  1. In a large mixing bowl, combine the quinoa, flour, sugar, baking powder, baking soda, and salt. Mix well.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or butter.
  5. Pour 1/4 cup of batter onto the skillet or griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip the pancake and cook for an additional 2-3 minutes.
  7. Repeat with the remaining batter.
  8. Serve pancakes warm and top with desired toppings.
