Quinoa Chocolate Chip Cookies
Ingredients:
- 1 cup cooked quinoa
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Instructions:
- In a medium-sized bowl, mix together cooked quinoa, flour, baking soda, and salt.
- In a separate large bowl, cream together butter and sugars until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- Slowly mix in the dry ingredients until a dough forms.
- Stir in chocolate chips.
- Preheat oven to 375 degrees F (190 degrees C) and line a baking sheet with parchment paper.
- Using a spoon or cookie scoop, drop dough onto prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake for 10-12 minutes, until the edges are slightly golden.
- Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
