Quinoa Chocolate Chip Cookies

  1. In a medium-sized bowl, mix together cooked quinoa, flour, baking soda, and salt.
  2. In a separate large bowl, cream together butter and sugars until light and fluffy.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. Slowly mix in the dry ingredients until a dough forms.
  5. Stir in chocolate chips.
  6. Preheat oven to 375 degrees F (190 degrees C) and line a baking sheet with parchment paper.
  7. Using a spoon or cookie scoop, drop dough onto prepared baking sheet, leaving about 2 inches of space between each cookie.
  8. Bake for 10-12 minutes, until the edges are slightly golden.
  9. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
