Quinoa Bowl
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/4 tsp salt
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper, to taste
Instructions:
- In a medium saucepan, combine quinoa, water, and salt. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed.
- Remove from heat and let stand for 5 minutes. Fluff with a fork and set aside to cool.
- In a large bowl, combine cooled quinoa, avocado, cherry tomatoes, cucumber, red onion, feta cheese, and cilantro.
- Squeeze lime juice over the bowl and mix well.
- Season with salt and pepper, to taste. Serve immediately or refrigerate until ready to serve.
