Quinoa Bowl

Instructions:

  1. In a medium saucepan, combine quinoa, water, and salt. Bring to a boil over high heat.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed.
  3. Remove from heat and let stand for 5 minutes. Fluff with a fork and set aside to cool.
  4. In a large bowl, combine cooled quinoa, avocado, cherry tomatoes, cucumber, red onion, feta cheese, and cilantro.
  5. Squeeze lime juice over the bowl and mix well.
  6. Season with salt and pepper, to taste. Serve immediately or refrigerate until ready to serve.
