Quinoa and Vegetable Stir Fry
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- Salt and pepper, to taste
Instructions:
- Rinse the quinoa in a fine mesh strainer under running water. In a medium pot, bring 2 cups of water to a boil. Add in the rinsed quinoa, reduce the heat to low, and cover. Cook for about 15 minutes, until all of the water is absorbed and the quinoa is tender. Fluff with a fork and set aside.
- In a large pan or wok, heat the olive oil over medium heat. Add in the onion and garlic and cook for about 2 minutes, until fragrant.
- Add in the red bell pepper, zucchini, broccoli, and cauliflower. Stir fry for about 5 minutes, until the vegetables are tender but still crisp.
- In a small bowl, mix together the soy sauce and sesame oil. Pour the mixture over the vegetables and stir to combine.
- Add the cooked quinoa to the pan and stir fry with the vegetables for an additional 2 minutes.
- Season with salt and pepper to taste. Serve hot and enjoy your delicious quinoa and vegetable stir fry!
