Quinoa and Black Beans

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and let simmer for 15 minutes or until all water is absorbed.
  2. In a large mixing bowl, combine cooked quinoa, black beans, red bell pepper, red onion, cherry tomatoes, avocado, cilantro, lime juice, salt, and pepper. Mix well.
  3. Serve immediately or refrigerate for later. Enjoy!
