Quinoa and Black Beans
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and let simmer for 15 minutes or until all water is absorbed.
- In a large mixing bowl, combine cooked quinoa, black beans, red bell pepper, red onion, cherry tomatoes, avocado, cilantro, lime juice, salt, and pepper. Mix well.
- Serve immediately or refrigerate for later. Enjoy!
