Quinoa and Avocado Salad

Instructions:

  1. In a medium sized pot, bring 2 cups of water to a boil. Add 1 cup of quinoa and reduce heat to a simmer. Cover and let cook for 15 minutes or until all water has been absorbed. Set aside to cool.
  2. While the quinoa is cooking, dice the avocados and add them to a large bowl.
  3. Add the diced red onion and chopped cilantro to the bowl.
  4. In a small bowl, mix together the lime juice, olive oil, salt, and pepper. Pour over the avocado mixture.
  5. Add the cooled quinoa to the bowl and mix all the ingredients together until well combined.
  6. Serve immediately or refrigerate until ready to serve.
