Quinoa and Avocado Salad
Ingredients:
- 1 cup uncooked quinoa
- 2 ripe avocados
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a medium sized pot, bring 2 cups of water to a boil. Add 1 cup of quinoa and reduce heat to a simmer. Cover and let cook for 15 minutes or until all water has been absorbed. Set aside to cool.
- While the quinoa is cooking, dice the avocados and add them to a large bowl.
- Add the diced red onion and chopped cilantro to the bowl.
- In a small bowl, mix together the lime juice, olive oil, salt, and pepper. Pour over the avocado mixture.
- Add the cooled quinoa to the bowl and mix all the ingredients together until well combined.
- Serve immediately or refrigerate until ready to serve.
