Quince Jam
Ingredients:
- 8 cups chopped quince
- 4 cups sugar
- 1 lemon, juiced
- 1 cinnamon stick
- 1/2 cup water
Instructions:
- Peel and core quince. Cut into small dice.
- In a large pot, combine quince, sugar, lemon juice, cinnamon stick, and water.
- Bring to a boil over medium-high heat, then reduce heat to low and let simmer for about 45 minutes, stirring occasionally.
- Once the quince is soft and the mixture has thickened, remove from heat and discard cinnamon stick.
- Using an immersion blender, blend the jam until smooth. If you don't have an immersion blender, you can transfer the mixture to a regular blender and blend until smooth.
- Return the pot to medium heat and let the jam cook for another 15 minutes, stirring frequently, until it becomes thick and glossy.
- Remove from heat and let cool for a few minutes before transferring to sterilized jars.
- Store in the refrigerator for up to 3 months.
