Quince Jam

  1. Peel and core quince. Cut into small dice.
  2. In a large pot, combine quince, sugar, lemon juice, cinnamon stick, and water.
  3. Bring to a boil over medium-high heat, then reduce heat to low and let simmer for about 45 minutes, stirring occasionally.
  4. Once the quince is soft and the mixture has thickened, remove from heat and discard cinnamon stick.
  5. Using an immersion blender, blend the jam until smooth. If you don't have an immersion blender, you can transfer the mixture to a regular blender and blend until smooth.
  6. Return the pot to medium heat and let the jam cook for another 15 minutes, stirring frequently, until it becomes thick and glossy.
  7. Remove from heat and let cool for a few minutes before transferring to sterilized jars.
  8. Store in the refrigerator for up to 3 months.
