Quick Tomato Soup

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
  3. Add the diced tomatoes, vegetable broth, basil, oregano, salt, and pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low and let simmer for 10 minutes.
  5. Using an immersion blender or regular blender, blend the soup until smooth.
  6. If using a regular blender, return soup to the pot and heat for an additional 5 minutes.
  7. Serve hot and enjoy your quick and easy tomato soup!
