Quick Tomato Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a large pot, heat the olive oil over medium-high heat.
- Add the chopped onion and garlic, and sauté for 2-3 minutes until softened.
- Add the diced tomatoes, vegetable broth, basil, oregano, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let simmer for 10 minutes.
- Using an immersion blender or regular blender, blend the soup until smooth.
- If using a regular blender, return soup to the pot and heat for an additional 5 minutes.
- Serve hot and enjoy your quick and easy tomato soup!
