Quick Pickles
Ingredients:
- 6 pickling cucumbers, thinly sliced
- 1 small onion, thinly sliced
- 1 cup white vinegar
- 1 cup water
- 1/4 cup sugar
- 1 tablespoon salt
- 1 teaspoon mustard seeds
- 1/2 teaspoon dill seeds
- 1/4 teaspoon red pepper flakes (optional)
Instructions:
- In a large jar or container, layer the cucumber slices and onion slices.
- In a small saucepan, combine the white vinegar, water, sugar, salt, mustard seeds, dill seeds, and red pepper flakes (if using). Bring to a boil over medium-high heat, stirring until the sugar and salt have dissolved.
- Pour the hot vinegar mixture over the cucumbers and onions. Use a spoon to gently press the cucumbers down to make sure they are all covered in the liquid.
- Cover the jar or container and refrigerate for at least 1 hour. The longer it sits, the stronger the pickle flavor will be.
- Enjoy your quick pickles as a topping for sandwiches or burgers, or as a tasty snack!
