Quick Pickles

  1. In a large jar or container, layer the cucumber slices and onion slices.
  2. In a small saucepan, combine the white vinegar, water, sugar, salt, mustard seeds, dill seeds, and red pepper flakes (if using). Bring to a boil over medium-high heat, stirring until the sugar and salt have dissolved.
  3. Pour the hot vinegar mixture over the cucumbers and onions. Use a spoon to gently press the cucumbers down to make sure they are all covered in the liquid.
  4. Cover the jar or container and refrigerate for at least 1 hour. The longer it sits, the stronger the pickle flavor will be.
  5. Enjoy your quick pickles as a topping for sandwiches or burgers, or as a tasty snack!
