Quiche Lorraine

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. In the same skillet, cook onion until soft and translucent. Drain off any excess fat.
  4. In a medium bowl, beat eggs, milk, salt, pepper and nutmeg. Add crumbled bacon, onion and cheese; stir well. Pour mixture into pie crust.
  5. Bake in preheated oven for 30 to 40 minutes, or until knife inserted in center comes out clean. If necessary, cover edges of crust with foil to prevent burning.
  6. Let quiche cool for 10 minutes before serving.
