Quesadilla
Ingredients:
- 2 large tortillas
- 1 cup shredded cheese
- 1/4 cup chopped onion
- 1/4 cup diced bell peppers
- 1/4 cup diced cooked chicken
- 1/4 cup salsa
- 2 tbsp olive oil
Instructions:
- In a large skillet, heat olive oil over medium heat.
- Place one tortilla in the skillet and top with half of the cheese, onion, bell peppers, chicken, and salsa.
- Place the other tortilla on top and cook for 2-3 minutes until the bottom is crispy and golden brown.
- Flip the quesadilla and cook for an additional 2-3 minutes until the other side is crispy and golden brown.
- Remove from the skillet and let cool for a minute before cutting into wedges.
- Repeat with remaining ingredients to make a second quesadilla.
- Serve with extra salsa, sour cream, and guacamole for dipping, if desired.
