Quesadilla

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Place one tortilla in the skillet and top with half of the cheese, onion, bell peppers, chicken, and salsa.
  3. Place the other tortilla on top and cook for 2-3 minutes until the bottom is crispy and golden brown.
  4. Flip the quesadilla and cook for an additional 2-3 minutes until the other side is crispy and golden brown.
  5. Remove from the skillet and let cool for a minute before cutting into wedges.
  6. Repeat with remaining ingredients to make a second quesadilla.
  7. Serve with extra salsa, sour cream, and guacamole for dipping, if desired.
