Pudding

  1. In a medium saucepan, mix together sugar, cornstarch, and salt.
  2. Gradually whisk in milk until the mixture is smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  4. In a small bowl, whisk together egg yolks.
  5. Spoon about 1/2 cup of the hot milk mixture into the egg yolks, whisking constantly.
  6. Pour the egg yolk mixture into the saucepan, whisking constantly.
  7. Cook, stirring constantly, until the mixture thickens.
  8. Remove from heat and stir in butter, vanilla extract, and chocolate until the chocolate is melted and the mixture is smooth.
  9. Pour the pudding into individual serving cups or a large bowl.
  10. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
  11. Refrigerate for at least 2 hours before serving.
  12. Top with whipped cream if desired.
