Pudding
Ingredients:
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 1/2 cups whole milk
- 3 egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 6 ounces bittersweet chocolate, chopped
- Whipped cream (optional)
Instructions:
- In a medium saucepan, mix together sugar, cornstarch, and salt.
- Gradually whisk in milk until the mixture is smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- In a small bowl, whisk together egg yolks.
- Spoon about 1/2 cup of the hot milk mixture into the egg yolks, whisking constantly.
- Pour the egg yolk mixture into the saucepan, whisking constantly.
- Cook, stirring constantly, until the mixture thickens.
- Remove from heat and stir in butter, vanilla extract, and chocolate until the chocolate is melted and the mixture is smooth.
- Pour the pudding into individual serving cups or a large bowl.
- Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
- Refrigerate for at least 2 hours before serving.
- Top with whipped cream if desired.
