Potato Soup

  1. In a large pot, cook the diced potatoes, onion, and garlic over medium heat until they are tender, stirring occasionally.
  2. Add the broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, until the potatoes are fully cooked.
  3. Using an immersion blender, puree the soup until it reaches your desired consistency. If you don't have an immersion blender, you can use a regular blender, but be careful as the soup will be hot. You may need to blend in batches.
  4. Once pureed, stir in the milk and heavy cream. Add salt and pepper to taste.
  5. Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together.
  6. Serve hot and top with shredded cheese, crumbled bacon, and sliced green onions, if desired.
