Potato Soup
Ingredients:
- 6 medium potatoes, peeled and diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of milk
- 1/2 cup of heavy cream
- Salt and pepper, to taste
- Optional toppings: shredded cheese, crumbled bacon, sliced green onions
Instructions:
- In a large pot, cook the diced potatoes, onion, and garlic over medium heat until they are tender, stirring occasionally.
- Add the broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, until the potatoes are fully cooked.
- Using an immersion blender, puree the soup until it reaches your desired consistency. If you don't have an immersion blender, you can use a regular blender, but be careful as the soup will be hot. You may need to blend in batches.
- Once pureed, stir in the milk and heavy cream. Add salt and pepper to taste.
- Let the soup simmer for an additional 5-10 minutes to allow the flavors to meld together.
- Serve hot and top with shredded cheese, crumbled bacon, and sliced green onions, if desired.
