Potato Salad

  1. Wash and peel 4 medium potatoes. Cut them into bite-sized cubes.
  2. In a pot, bring salted water to a boil and add the potato cubes. Cook for 12-15 minutes until the potatoes are fork-tender. Drain and let cool.
  3. In a bowl, mix together the diced red onion, celery, and dill pickles.
  4. In a separate small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and salt and pepper.
  5. Add the cooked and cooled potatoes to the bowl with the vegetables and mix well.
  6. Pour the dressing over the potato salad and toss to coat all the ingredients.
  7. Garnish with chopped fresh parsley (optional).
  8. Refrigerate for at least an hour before serving to allow the flavors to meld together.
