Potato Salad
Ingredients:
- 4 medium potatoes
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup diced dill pickles
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Wash and peel 4 medium potatoes. Cut them into bite-sized cubes.
- In a pot, bring salted water to a boil and add the potato cubes. Cook for 12-15 minutes until the potatoes are fork-tender. Drain and let cool.
- In a bowl, mix together the diced red onion, celery, and dill pickles.
- In a separate small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and salt and pepper.
- Add the cooked and cooled potatoes to the bowl with the vegetables and mix well.
- Pour the dressing over the potato salad and toss to coat all the ingredients.
- Garnish with chopped fresh parsley (optional).
- Refrigerate for at least an hour before serving to allow the flavors to meld together.
