Polenta
Ingredients:
- 1 cup yellow cornmeal
- 4 cups water or vegetable broth
- 1 teaspoon salt
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- Optional toppings: fresh herbs, chopped tomatoes, sautéed mushrooms
Instructions:
- In a medium saucepan, bring water or broth to a boil. Add salt.
- Add cornmeal and stir constantly for 5 minutes, until mixture thickens.
- Reduce heat to low and stir occasionally for 30 minutes, until polenta is smooth and thick.
- Stir in Parmesan cheese, butter, and black pepper. Mix well.
- In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.
- Add garlic mixture to polenta and stir to combine.
- Serve polenta warm, topped with optional toppings of your choice. Enjoy!
