Polenta

  1. In a medium saucepan, bring water or broth to a boil. Add salt.
  2. Add cornmeal and stir constantly for 5 minutes, until mixture thickens.
  3. Reduce heat to low and stir occasionally for 30 minutes, until polenta is smooth and thick.
  4. Stir in Parmesan cheese, butter, and black pepper. Mix well.
  5. In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.
  6. Add garlic mixture to polenta and stir to combine.
  7. Serve polenta warm, topped with optional toppings of your choice. Enjoy!
