Pho

  1. Soak the rice noodles in hot water for about 20 minutes until they are softened.
  2. In a large pot, heat some oil over medium heat and add in the onion, garlic, and ginger. Cook until fragrant.
  3. Add in the cinnamon stick, star anise, coriander seeds, and fennel seeds. Stir for about 30 seconds.
  4. Add in the thinly sliced beef and cook until browned.
  5. Add in the beef broth and bring to a boil. Reduce heat and let simmer for about 15 minutes.
  6. Season with salt and pepper to taste.
  7. Drain the rice noodles and add them to the pot. Cook for an additional 5 minutes.
  8. Remove the cinnamon stick and star anise from the pot.
