Pecan Pralines
Ingredients:
- 1 cup chopped pecans
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup heavy cream
- 1/4 cup butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
- In a large saucepan, combine the granulated sugar, brown sugar, heavy cream, butter, vanilla extract, and salt over medium heat, stirring constantly.
- Continue stirring until the mixture comes to a boil.
- Cook for 1-2 minutes, stirring constantly, until the mixture reaches soft ball stage (235-240°F) on a candy thermometer.
- Remove the pan from heat and add in the chopped pecans.
- Beat with a wooden spoon until the praline mixture has thickened and lost its gloss.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Allow the pralines to cool and harden before serving.
