Pecan Pralines

  1. In a large saucepan, combine the granulated sugar, brown sugar, heavy cream, butter, vanilla extract, and salt over medium heat, stirring constantly.
  2. Continue stirring until the mixture comes to a boil.
  3. Cook for 1-2 minutes, stirring constantly, until the mixture reaches soft ball stage (235-240°F) on a candy thermometer.
  4. Remove the pan from heat and add in the chopped pecans.
  5. Beat with a wooden spoon until the praline mixture has thickened and lost its gloss.
  6. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  7. Allow the pralines to cool and harden before serving.
