Peanut Brittle
Ingredients:
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1 cup peanuts
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- 1 teaspoon baking soda
Instructions:
- Grease a large baking sheet and set aside.
- In a large saucepan, combine the sugar, corn syrup, and water.
- Cook over medium heat, stirring constantly, until sugar is dissolved.
- Stir in peanuts and continue cooking, stirring frequently, until mixture reaches a temperature of 300 degrees F (150 degrees C) on a candy thermometer.
- Remove from heat and quickly stir in vanilla, butter, and baking soda.
- Immediately pour mixture onto prepared baking sheet and spread out evenly.
- Allow to cool completely, then break into pieces.
- Store in an airtight container for up to 2 weeks.
