Peanut Brittle

Instructions:

  1. Grease a large baking sheet and set aside.
  2. In a large saucepan, combine the sugar, corn syrup, and water.
  3. Cook over medium heat, stirring constantly, until sugar is dissolved.
  4. Stir in peanuts and continue cooking, stirring frequently, until mixture reaches a temperature of 300 degrees F (150 degrees C) on a candy thermometer.
  5. Remove from heat and quickly stir in vanilla, butter, and baking soda.
  6. Immediately pour mixture onto prepared baking sheet and spread out evenly.
  7. Allow to cool completely, then break into pieces.
  8. Store in an airtight container for up to 2 weeks.
