Peach Cobbler

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, mix together 1 cup flour, 1 cup sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Add the cold butter and use a pastry cutter or your fingers to mix it in until the mixture resembles coarse crumbs.
  3. In a separate bowl, mix together the sliced peaches and 1/4 cup of cold water. Pour the peaches into a 9x13 inch baking dish and spread them evenly.
  4. Sprinkle the flour mixture over the peaches, making sure to cover them completely.
  5. In the same bowl used for the flour mixture, mix together 1/2 cup oats and 1/2 cup chopped pecans (optional).
  6. Sprinkle the oat mixture over the flour mixture in the baking dish.
  7. Bake for 45 minutes in the preheated oven, or until the topping is golden brown and the fruit is bubbling. Serve warm or at room temperature.
