Peach Cobbler
Ingredients:
- 6 cups sliced fresh peaches
- 1 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold butter, cut into small pieces
- 1/2 cup old fashioned oats
- 1/2 cup chopped pecans (optional)
- 1/4 cup cold water
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix together 1 cup flour, 1 cup sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Add the cold butter and use a pastry cutter or your fingers to mix it in until the mixture resembles coarse crumbs.
- In a separate bowl, mix together the sliced peaches and 1/4 cup of cold water. Pour the peaches into a 9x13 inch baking dish and spread them evenly.
- Sprinkle the flour mixture over the peaches, making sure to cover them completely.
- In the same bowl used for the flour mixture, mix together 1/2 cup oats and 1/2 cup chopped pecans (optional).
- Sprinkle the oat mixture over the flour mixture in the baking dish.
- Bake for 45 minutes in the preheated oven, or until the topping is golden brown and the fruit is bubbling. Serve warm or at room temperature.
