Pasta Primavera

  1. In a large pot, bring water to a boil. Add linguine and cook according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and onion and cook until softened.
  3. Add mushrooms, zucchini, and yellow squash. Cook for about 5 minutes until vegetables are tender.
  4. Add red and yellow bell peppers and cook for an additional 2-3 minutes.
  5. Stir in cherry tomatoes and cooked linguine. Cook for an additional 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, sprinkled with Parmesan cheese.
