Pasta Primavera
Ingredients:
- 8 ounces linguine pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 cup sliced mushrooms
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
- In a large pot, bring water to a boil. Add linguine and cook according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and onion and cook until softened.
- Add mushrooms, zucchini, and yellow squash. Cook for about 5 minutes until vegetables are tender.
- Add red and yellow bell peppers and cook for an additional 2-3 minutes.
- Stir in cherry tomatoes and cooked linguine. Cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot, sprinkled with Parmesan cheese.
