Paella
Ingredients:
- 1 tablespoon olive oil
- 1 onion
- 2 cloves of garlic
- 1 red bell pepper
- 1 yellow bell pepper
- 1 lb of chicken, cut into bite-sized pieces
- 1 lb of shrimp, peeled and deveined
- 1 cup of chorizo, sliced
- 2 cups of rice
- 4 cups of chicken broth
- 1 teaspoon of smoked paprika
- 1 pinch of saffron
- Salt and pepper to taste
- 1 cup of frozen peas
- Lemon wedges for serving
Instructions:
- In a large paella pan or a large skillet, heat olive oil over medium heat.
- Add onion, garlic, and bell peppers and cook for 2-3 minutes until softened.
- Add chicken, shrimp, and chorizo and cook for 5-6 minutes until chicken is browned and shrimp turns pink.
- Stir in rice and cook for 2-3 minutes until it starts to toast.
- Pour in chicken broth, smoked paprika, saffron, salt, and pepper. Stir well.
- Bring mixture to a boil, then reduce heat to low and let it simmer for 20 minutes without stirring.
- After 20 minutes, stir in frozen peas and cook for an additional 5 minutes.
- Remove from heat and let it sit for 5 minutes
