Ingredients:

Instructions:

  1. In a large paella pan or a large skillet, heat olive oil over medium heat.
  2. Add onion, garlic, and bell peppers and cook for 2-3 minutes until softened.
  3. Add chicken, shrimp, and chorizo and cook for 5-6 minutes until chicken is browned and shrimp turns pink.
  4. Stir in rice and cook for 2-3 minutes until it starts to toast.
  5. Pour in chicken broth, smoked paprika, saffron, salt, and pepper. Stir well.
  6. Bring mixture to a boil, then reduce heat to low and let it simmer for 20 minutes without stirring.
  7. After 20 minutes, stir in frozen peas and cook for an additional 5 minutes.
  8. Remove from heat and let it sit for 5 minutes
