Oyster Stew
Ingredients:
- 24 large oysters
- 4 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1/4 cup heavy cream
- Salt and pepper, to taste
- Paprika, for garnish
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the flour and stir until well combined.
- Gradually pour in the milk and whisk until smooth.
- Add the oysters and their liquor to the pot and bring to a simmer.
- Cook for 5-7 minutes, until the edges of the oysters begin to curl.
- Stir in the heavy cream and season with salt and pepper to taste.
- Simmer for an additional 2-3 minutes.
- Remove from heat and let cool for a few minutes before serving.
- Serve hot, garnished with a sprinkle of paprika on top.
