Oyster Rockefeller

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. Scrub the oysters clean under cold running water.
  3. Place the oysters on a baking sheet and bake for 6-8 minutes, until the shells have popped open. Remove from the oven and let cool.
  4. In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes.
  5. Add the chopped spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat.
  6. Carefully open the oysters and remove the top shell. Discard the top shells and place the oysters in a baking dish.
  7. Spoon the spinach mixture onto each oyster, dividing evenly among them.
  8. Sprinkle each oyster with Parmesan cheese and top with Panko breadcrumbs.
  9. Return the oysters to the oven and bake for an additional 5 minutes, until the breadcrumbs are golden brown and the cheese is melted.
  10. Season with salt and pepper to taste before serving.
