Oyster Rockefeller
Ingredients:
- 1 dozen fresh oysters
- 6 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup Panko breadcrumbs
- Salt and pepper to taste
Instructions:
- Preheat the oven to 425 degrees F (220 degrees C).
- Scrub the oysters clean under cold running water.
- Place the oysters on a baking sheet and bake for 6-8 minutes, until the shells have popped open. Remove from the oven and let cool.
- In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes.
- Add the chopped spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat.
- Carefully open the oysters and remove the top shell. Discard the top shells and place the oysters in a baking dish.
- Spoon the spinach mixture onto each oyster, dividing evenly among them.
- Sprinkle each oyster with Parmesan cheese and top with Panko breadcrumbs.
- Return the oysters to the oven and bake for an additional 5 minutes, until the breadcrumbs are golden brown and the cheese is melted.
- Season with salt and pepper to taste before serving.
