Orzo Salad
Ingredients:
- 1 cup uncooked orzo pasta
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumbers, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup kalamata olives, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- Cook orzo pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked orzo, cherry tomatoes, cucumbers, red onion, kalamata olives, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
- Pour dressing over orzo salad and toss to coat.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld together.
