Orzo Salad

Instructions:

  1. Cook orzo pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked orzo, cherry tomatoes, cucumbers, red onion, kalamata olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.
  4. Pour dressing over orzo salad and toss to coat.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld together.
