Orange Tofu
Ingredients:
- 1 block of firm tofu
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 2 cloves of garlic, minced
- 1 tablespoon grated ginger
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- Zest of 1 orange
- 2 green onions, sliced for garnish
Instructions:
- Press tofu between paper towels or a clean dish towel to remove excess water. Cut tofu into cubes.
- In a shallow dish, add cornstarch and coat tofu cubes evenly.
- In a large pan, heat oil over medium heat. Once hot, add tofu cubes and cook until they are golden brown on all sides, about 5-6 minutes. Remove tofu from pan and set aside.
- In the same pan, add orange juice, soy sauce, garlic, ginger, brown sugar, rice vinegar, and orange zest. Stir well and let the sauce simmer for 2-3 minutes.
- Add tofu back into the pan and stir to coat evenly with the sauce. Cook for an additional 2-3 minutes.
- Serve hot over rice and garnish with green onions.
