Onion Soup

  1. In a large pot, melt butter over medium heat. Add onions and cook for about 30 minutes, until caramelized.
  2. Add garlic and cook for an additional 2-3 minutes.
  3. Sprinkle flour over the onions and stir until well combined.
  4. Pour in broth and red wine, and add thyme and bay leaf. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Meanwhile, preheat your oven's broiler to high.
  6. Place baguette slices on a baking sheet and broil for 2-3 minutes on each side, until golden brown.
  7. Remove bay leaf from the soup and season with salt and pepper to taste.
  8. Ladle soup into oven-safe bowls and top with a few baguette slices. Sprinkle grated Gruyere cheese over the top.
  9. Place bowls on a baking sheet and broil for 2-3 minutes, until cheese is melted and bubbly.
  10. Serve hot and enjoy your delicious Onion Soup!
