Olive Oil Cake
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 large eggs
- 3/4 cup olive oil
- 3/4 cup milk
- 1 tsp vanilla extract
- zest of 1 lemon
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup honey
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan with olive oil and set aside.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs until light and fluffy. Slowly pour in the olive oil while continuing to beat the eggs.
- Gradually add the milk, vanilla extract, lemon zest, lemon juice, and honey to the egg mixture while continuing to beat.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
