  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan with olive oil and set aside.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs until light and fluffy. Slowly pour in the olive oil while continuing to beat the eggs.
  4. Gradually add the milk, vanilla extract, lemon zest, lemon juice, and honey to the egg mixture while continuing to beat.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
