Olive Bread

  1. In a large mixing bowl, combine the flour, salt, and sugar.
  2. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
  3. Stir the yeast mixture and olive oil into the dry ingredients.
  4. Knead the dough on a floured surface for about 10 minutes, until it is smooth and elastic.
  5. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour.
  6. Punch down the dough and knead in the chopped olives and Parmesan cheese.
  7. Shape the dough into a loaf and place it in a greased 9x5 inch bread pan.
  8. Cover and let it rise for another 30 minutes.
  9. Preheat your oven to 375°F (190°C).
  10. Bake the bread for 25-30 minutes, until it is golden brown on top.
  11. Remove from the oven and let it cool before slicing and serving.
