Okra Gumbo
Ingredients:
- 1 pound okra, sliced
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Cooked rice for serving
- Fresh parsley or green onions for garnish
Instructions:
- Heat the oil in a dutch oven or large pot over medium heat.
- Add the sliced okra and cook for 10 minutes, stirring frequently.
- Remove the okra from the pot and set aside.
- In the same pot, add the chopped onion, bell pepper, and celery.
- Cook for 5 minutes, or until the vegetables have softened.
- Add in the minced garlic and cook for an additional minute.
- Pour in the diced tomatoes and chicken or vegetable broth.
- Stir in the Cajun seasoning and bring the mixture to a boil.
- Reduce the heat to low and let the gumbo simmer for 20 minutes.
- Add the cooked okra back into the pot and let it simmer for an additional 10 minutes.
- Taste and season with salt and pepper as needed.
- Serve over cooked rice and garnish with fresh parsley or green onions.
