Okra Gumbo

  1. Heat the oil in a dutch oven or large pot over medium heat.
  2. Add the sliced okra and cook for 10 minutes, stirring frequently.
  3. Remove the okra from the pot and set aside.
  4. In the same pot, add the chopped onion, bell pepper, and celery.
  5. Cook for 5 minutes, or until the vegetables have softened.
  6. Add in the minced garlic and cook for an additional minute.
  7. Pour in the diced tomatoes and chicken or vegetable broth.
  8. Stir in the Cajun seasoning and bring the mixture to a boil.
  9. Reduce the heat to low and let the gumbo simmer for 20 minutes.
  10. Add the cooked okra back into the pot and let it simmer for an additional 10 minutes.
  11. Taste and season with salt and pepper as needed.
  12. Serve over cooked rice and garnish with fresh parsley or green onions.
