Oatmeal Raisin Cookies

  1. In a large mixing bowl, cream together the butter, brown sugar, and white sugar until smooth and fluffy.
  2. Add in the eggs, one at a time, followed by the vanilla extract, and continue to mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet mixture and mix until just combined.
  5. Stir in the oats and raisins until evenly distributed throughout the dough.
  6. Cover the dough with plastic wrap and refrigerate for at least 30 minutes to allow the dough to firm up.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Using a spoon or cookie scoop, form the dough into 1-inch balls and place them on the prepared baking sheet.
  9. Bake the cookies for 10-12 minutes, or until the edges are lightly golden brown.
  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
