Oatmeal Raisin Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 1 cup raisins
Instructions:
- In a large mixing bowl, cream together the butter, brown sugar, and white sugar until smooth and fluffy.
- Add in the eggs, one at a time, followed by the vanilla extract, and continue to mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet mixture and mix until just combined.
- Stir in the oats and raisins until evenly distributed throughout the dough.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes to allow the dough to firm up.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a spoon or cookie scoop, form the dough into 1-inch balls and place them on the prepared baking sheet.
- Bake the cookies for 10-12 minutes, or until the edges are lightly golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
