Oat Bran Muffins

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a muffin pan or line with muffin liners.
  2. In a large bowl, mix together oat bran, flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat together milk, egg, and vegetable oil. Pour into dry ingredients and mix until just blended. Fold in raisins, if desired.
  4. Fill prepared muffin cups 2/3 full.
  5. Bake in preheated oven for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
