Oat Bran Muffins
Ingredients:
- 1 1/2 cups oat bran
- 1 cup all-purpose flour
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1/2 cup raisins (optional)
Instructions:
- Preheat oven to 400 degrees F (200 degrees C). Grease a muffin pan or line with muffin liners.
- In a large bowl, mix together oat bran, flour, sugar, baking powder, and salt.
- In a separate bowl, beat together milk, egg, and vegetable oil. Pour into dry ingredients and mix until just blended. Fold in raisins, if desired.
- Fill prepared muffin cups 2/3 full.
- Bake in preheated oven for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
