Nutter Butter Cookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1/4 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped peanuts
- 24 whole Nutter Butter cookies
Instructions:
- Preheat your oven to 350 degrees F (175 degrees C).
- In a small bowl, mix together the flour, baking powder, and salt.
- In a separate larger bowl, cream together the butter and both sugars until light and fluffy.
- Mix in the peanut butter, egg, and vanilla extract until well combined.
- Slowly add in the flour mixture and mix until just combined.
- Fold in the chopped peanuts.
- Take a tablespoon-sized amount of dough and flatten it into a disc shape.
- Place a whole Nutter Butter cookie in the center and wrap the dough around it, forming a ball.
- Repeat with the remaining dough and cookies.
- Place the cookies on a greased or lined baking sheet.
- Bake for 12-15 minutes, until lightly golden on the edges.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
