Nutter Butter Cookies

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix together the flour, baking powder, and salt.
  3. In a separate larger bowl, cream together the butter and both sugars until light and fluffy.
  4. Mix in the peanut butter, egg, and vanilla extract until well combined.
  5. Slowly add in the flour mixture and mix until just combined.
  6. Fold in the chopped peanuts.
  7. Take a tablespoon-sized amount of dough and flatten it into a disc shape.
  8. Place a whole Nutter Butter cookie in the center and wrap the dough around it, forming a ball.
  9. Repeat with the remaining dough and cookies.
  10. Place the cookies on a greased or lined baking sheet.
  11. Bake for 12-15 minutes, until lightly golden on the edges.
  12. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
