Nut Roast

  1. In a pan, heat olive oil over medium heat and sauté onion, carrot, and celery until soft.
  2. Add in the mixed nuts, herbs, and spices, and cook for 2-3 minutes.
  3. Remove from heat and let cool for a few minutes.
  4. In a food processor, pulse the nut mixture until it forms a coarse crumb texture.
  5. Transfer the mixture to a bowl and add in the breadcrumbs. Mix well.
  6. Slowly add in the vegetable broth, mixing until the mixture holds together.
  7. Preheat the oven to 375°F (190°C) and grease a loaf pan.
  8. Press the nut mixture firmly into the pan and bake for 35-40 minutes, until golden brown on top.
  9. Let cool for a few minutes before slicing and serving.
