Nut Roast
Ingredients:
- 1 cup of mixed nuts
- 1 onion, finely chopped
- 1 carrot, grated
- 1 celery stalk, finely chopped
- 1 cup of breadcrumbs
- 1/4 cup of vegetable broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried sage
- Salt and pepper to taste
Instructions:
- In a pan, heat olive oil over medium heat and sauté onion, carrot, and celery until soft.
- Add in the mixed nuts, herbs, and spices, and cook for 2-3 minutes.
- Remove from heat and let cool for a few minutes.
- In a food processor, pulse the nut mixture until it forms a coarse crumb texture.
- Transfer the mixture to a bowl and add in the breadcrumbs. Mix well.
- Slowly add in the vegetable broth, mixing until the mixture holds together.
- Preheat the oven to 375°F (190°C) and grease a loaf pan.
- Press the nut mixture firmly into the pan and bake for 35-40 minutes, until golden brown on top.
- Let cool for a few minutes before slicing and serving.
